I'm getting in all my warm breakfasts while it's still chilly outside. I basically live on quinoa. It's so chewy and delicious and it's a complete protein with a ton of fiber so this is the perfect way to start the day.
I like to use a 1/4 cup each of red and white quinoa.
Rinse quinoa well, add water and bring to a boil. Once boiling, turn down the heat and allow it to simmer.
Chop your apple.
When the water is 80% absorbed, add the diced apple. When the quinoa and apple pieces are fully cooked, add the flax. Divide into three servings.
Add your extras. I used almond milk, pepitas, unsweetened dried cranberries and a little grade b maple syrup.
